1 lb dogfish (or monkfish/cod), cut into chunks
1 cup white wine vinegar
2 cups fish stock
1 large onion, finely chopped
2 cloves garlic, minced
1/4 cup extra virgin olive oil
2 bay leaves
1/4 cup pine nuts, toasted
1/4 cup raisins
Salt and pepper to taste
Lemon wedges and parsley for garnish (optional)
Directions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
- Add the fish chunks to the pot and cook for a few minutes until they start to brown slightly. Be careful not to overcook them at this stage.
- Pour in the white wine vinegar and let it simmer for a couple of minutes until it reduces slightly.
